300g Stilton, crumbled
200g Parmesan cheese, grated
2 tbsp Crème Fraiche
2 eggs, beaten
Pinch salt and pepper
Sourdough Bread
A jar of Hot Pow Wow Chutney

In a large bowl mix together the cheeses, crème fraiche and eggs with the salt and pepper, then chill for 20 minutes.

To serve, heat the grill and lightly toast the sliced bread (I prefer a good doorstep of a slice) on both sides. Place onto a baking sheet and top each slice with a generous dollop of Hot Pow Wow Chutney, then pile on the rarebit mixture – as much as you dare.

Grill for 3-5 minutes until golden brown and bubbling. Cut into slices or chunks. A perfect supper dish with baked beans or a pint of your favourite.
