Ingredients:
25g butter, (we love Norton’s Dairy)
115g trimmed leeks, finely sliced
175g fresh white breadcrumbs
2 tbsp Norfolk Crier Onion Marmalade
150g strong Cheddar Cheese, grated
Pinch Sea Salt and pepper
Panko Breadcrumbs to roll

Method:
Melt the butter in a frying pan and fry the leek gently without any colour for 8-10 minutes.

Into a bowl place the breadcrumbs, Norfolk Crier Onion Marmalade and cheese, and mix well until combined. Add the beaten eggs with salt and pepper. Then follow with the leeks and mix well, shape into a sausage shape. Roll into the Panko breadcrumbs and leave to chill for 30 minutes. Pan fry until golden and enjoy with a crisp, green salad.
